For me and my family, Christmas would not be complete without baking cookies. There are so many different varieties and recipes out there. You can make bars, sugar cookies, butter cookies, chocolate, to go nuts, or no nuts. How do you know that you have a winning cookie recipe everyone will enjoy?


Cooking for everyone's taste is an art form. Some people accept that they will make several different cookies just to make sure everyone in the family has a cookie they enjoy. What if I could share with you one recipe that will give each person the opportunity to have what they love? I have that for you with one awesome butter cookie recipe.


The beauty of this butter cookie recipe is on its own, it is an award winner. However, with one thumb impression, you can fill it with anything. And if you like Christmas a little over the top like me, you will find the genius in this idea. I wrote this Raspberry Cheesecake Butter Cookie recipe from this very concept.


But if raspberry or cheesecake is not your idea of Christmas cookie heaven, simply switch up the fillings. Instead of cheesecake batter, fill the cookie dough with ice cream toppings, jam, mini candy bars, or fruit compote.


You can keep the cheesecake batter and substitute the raspberry for any other jam or jelly flavor. I have recently fallen for a jam from the Dominican Republic that is pineapple and coconut flavored.


To add something special to the butter cookie dough, you could mix in finely chopped pecans or walnuts. Chocolate sprinkles would be awesome as well. The combinations are endless for your own over-the-top Christmas cookie recipe that everyone will enjoy and anyone can help make. You may even want to enlist some help to make sure you have enough fun, cheer, and cookies to share.

Raspberry Cheesecake Butter Cookies

  • 8 ounces Philadelphia Cream Cheese

  • 1 egg

  • 1/3 cup white sugar

  • 1 teaspoon vanilla extract

  • ¾ cup butter softened

  • ½ cup white sugar

  • 2 egg yolks

  • 1 ¾ cups all-purpose flour

  • ½ cup raspberry preserves, any flavor

Preheat the oven to 375. Beat softened cream cheese slightly then add 1 egg, sugar, and vanilla. Beat until light and fluffy and set aside.

In another bowl, cream together the butter, white sugar, and egg yolks. Mix in flour a little bit at a time until a soft dough forms. Roll dough into 1 inch balls. Place balls 2 inches apart onto ungreased cookie sheets. Use your finger to make a well or small bowl in the center of each cookie.

Heat the preserves in the microwave for 15 seconds to soften or liquefy. Fill the hole with 1/2 teaspoon of cream cheese mixture and top with preserves. Bake for 8 to 10 minutes in the preheated oven, until golden brown on the bottom. Remove from cookie sheets to cool on wire racks.
