I am blessed to have so many foodie friends in my life. They are my friends who know exactly how a dish should be cooked and with what ingredients. They are also my favorite resource for a beautiful presentation and new twists on classic dishes. Preparing a meal for friends can be intimidating. I want to make sure everyone will enjoy it.
Paula Schwartz has eaten in some of the finest restaurants around the world. She is also my best friend. Her palate is geared towards simplicity. One of my favorite appetizers that she has shared with me is honey drizzled crumbled goat cheese with tamari rice crackers for dipping. It’s rich and oh so simple with only three ingredients.
Another foodie friend of mine is Candace Jo Cagle. She has given me more inspiring recipes than anyone. Candace Jo is a Mississippi girl who turned Texas woman. Candace is brilliant at upgrading classic dishes. She makes tomato soup and grilled cheese sandwiches with heirloom tomatoes, basil, gouda, and bacon. It tickles me how excited Candace becomes over new ingredients and how to cook them. I like bringing this same excitement to my own creations.
When I think about what I have learned from both of these ladies, I can create a simple inspired dish that any foodie would clamor over. I often feel hands-on food is a nice treat. When creating a finger foods meal keep plenty of napkins handy. Charcuterie boards have recently made the list of foodie trends. This tells me that more people are ditching a fork or spoon dinner for a hands-on dining experience.
One favorite upgraded finger food recipe that is both simple and inspired is my Butter Baked Texas Shrimp. Shrimp baked in seasoned butter creates a delightful sauce for dipping. I serve this peel and eat recipe warm with toasted slices of French bread for dipping. Paula called it a Texas-style shrimp bruschetta. To round out the meal, serve with pickled green beans or asparagus, cherry tomatoes, cubed gouda cheese, or corn fritters. Or keep your sides simple with honey drizzled goat cheese and crackers like my girl, Paula, does. Everyone will be pleasantly pleased with this dish. Butter Baked Texas Shrimp
2 pounds large or jumbo shrimp tails, with shells on
2 tbsp. olive oil
2 medium jalapenos, seeded and sliced
6 cloves garlic, minced or pressed
2 sticks butter
½ cup chardonnay
1 tsp. salt
1 tsp. black pepper
French bread for dipping
cilantro (optional)
lime (optional)
Preheat oven to 375. Heat olive oil over medium heat in a saucepan. Add jalapenos and sauté until almost tender. Add garlic and cook stirring for a minute more. Add butter to the saucepan. Cook stirring until butter is melted. Stir in wine, salt, and pepper. Remove sauce from heat. Rinse shrimp under cold water. Place shrimp in a 9x11 or larger baking dish. Pour sauce over shrimp and toss to coat. Place baking dish in the oven for 5 minutes. Remove pan from oven and toss shrimp. Bake for 5 minutes more or until tails are pink and begin to curl. Remove from oven and garnish with chopped cilantro and lime wedges if desired. Serve with toasted French bread for dipping in the sauce.
